Transform Your Rice Dish with Delicious Pineapple Fried Rice Recipe

I am always looking for new recipes to try and ways to incorporate nutrients and protein into our food. Growing up, I had eaten ham fried rice when I was younger. However, being vegetarian, being vegetarian, I needed to find an alternative for the protein. And in addition to that, I wanted to feel good about eating it and feeding it to my three-year-old son, A. As usual, I tried to incorporate a lot of seeds and nuts. Below is my pineapple fried rice recipe.



Pineapple Fried Rice

Ingredients

  • 3/4 cup brown rice

  • 3/4 cup quinoa

  • 1 tablespoon butter

  • 1 pound carrots, sliced

  • 1 cup frozen peas

  • 1 cup cashews

  • 1 cup almonds

  • 1 tablespoon hemp seeds

  • 1 tablespoon pumpkin seeds

  • 1 tablespoon chia seeds

  • 3 teaspoons minced garlic

  • 1/2 teaspoon ground ginger

  • 3 large eggs

  • 20 oz pineapple chunks

  • 1/4 cup Mr. Yoshida's Original Gourmet Sauce

  • 2 green onions, chopped


Instructions

  • Measure out the brown rice and quinoa and put them into a large pot. Add the water required for each and then cook according to the brown rice directions.

  • When the rice is about halfway done, melt the butter in a large frying pan over medium heat.

  • Add the carrots, frozen peas, nuts, and seeds. Cook for about four minutes.

  • Stir in the garlic and ginger. Cook for about another minute.

  • Add the eggs and scramble them with the vegetables, nuts, and seeds until cooked through.

  • Add the rice and quinoa mixture, pineapple, and sauce to the pan. Stir for about two minutes.

  • Sprinkle with green onions and serve immediately.
