Transform Your Rice Dish with Delicious Pineapple Fried Rice Recipe
I am always looking for new recipes to try and ways to incorporate nutrients and protein into our food. Growing up, I had eaten ham fried rice when I was younger. However, being vegetarian, being vegetarian, I needed to find an alternative for the protein. And in addition to that, I wanted to feel good about eating it and feeding it to my three-year-old son, A. As usual, I tried to incorporate a lot of seeds and nuts. Below is my pineapple fried rice recipe.
Pineapple Fried Rice
Ingredients
3/4 cup brown rice
3/4 cup quinoa
1 tablespoon butter
1 pound carrots, sliced
1 cup frozen peas
1 cup cashews
1 cup almonds
1 tablespoon hemp seeds
1 tablespoon pumpkin seeds
1 tablespoon chia seeds
3 teaspoons minced garlic
1/2 teaspoon ground ginger
3 large eggs
20 oz pineapple chunks
1/4 cup Mr. Yoshida's Original Gourmet Sauce
2 green onions, chopped
Instructions
Measure out the brown rice and quinoa and put them into a large pot. Add the water required for each and then cook according to the brown rice directions.
When the rice is about halfway done, melt the butter in a large frying pan over medium heat.
Add the carrots, frozen peas, nuts, and seeds. Cook for about four minutes.
Stir in the garlic and ginger. Cook for about another minute.
Add the eggs and scramble them with the vegetables, nuts, and seeds until cooked through.
Add the rice and quinoa mixture, pineapple, and sauce to the pan. Stir for about two minutes.
Sprinkle with green onions and serve immediately.
